Summary
There are two parts to this apprenticeship:
- New Zealand Certificate in Meat and Meat Product Manufacturing (Level 3)
- New Zealand Certificate in Meat Processing and Meat Product Manufacturing (Level 4) with strands in Boning Operations and Optimising Meat Yields
A step up for skilled viscera, slaughter floor and dressing operators. Graduates will be equipped with technical skills and knowledge required to be classed as experienced and specialised slaughter floor operator with advanced dressing of large animal hides or small animal skins.

Graduates will have the skills and knowledge to be employed as a slaughter operator with advanced dressing of large animal hides or small animal skins.
Graduates will be capable of applying company quality, environmental and hygiene requirements to slaughter floor and dressing operations, monitoring compliance requirements and effectively working in a team.
